Pasta Spinach Salad

This is maybe my very favorite summer salad recipe...a winner from my mom. It is so yummy with fresh french bread. Of special note, I only used tomatoes from Tony's garden last night for this salad.


Pasta Spinach Salad

6 oz. rigatoni (cooked per directions and cooled)
2 medium tomatoes, seeded and chopped
1/2 cup crumbled feta cheese
1/3 cup Italian salad dressing
1/4 cup sliced green onion
2 Tbsp. sliced black olives
6 cups baby spinach leaves

Toss all ingredients and chill until serving.

Scary, but true. I actually love spinach. Not so much as a child, but I'm a regular Popeye now!

Healthy and yummy...that's what I need! I have always liked raw spinach but cooked...yuck, and luckily my kids like the raw/fresh too.

Oh yummy, yummy, yummy, yummy stuff! Not sure if I can get Bryce to try it (fingers crossed I can bribe him well though!) but Jason and I can tear this salad up, I'm sure of it! Mmmmmmm....

Aw, we love spinach salads at our house. I am sure we will be trying this out this next week...and mayeb smore cheesecake to top it off.

Ok, I am totally blown away by the amount of comments you recieved for the giveaway. Did you know that you have that many people who look at your blog??? I think you should take the winner from this pool..how does that sound?? I might have a better chance. This salad looks so good!
