Apple Orchard Pancake Mix

Here are our visting teachings gifts for the month of September. I wanted to do something with apples...and since the cooling weather makes Fall my favorite time to cook, I came up with this idea.


Here is the recipe:

Layer in quart canning jars: 2 1/2 cups flour, 2 tsp. baking powder, 1 1/4 tsp. cinnamon, 1/2 tsp. baking soda, 1/4 tsp. salt, 3/4 cup brown sugar, 3/4 cup chopped dried apples, 3/4 cup golden raisins.

I used some homespun fabric between the canning lid and ring and attached the recipe for the pancakes with twine. I'm gonna make some up this week for my family, too!

Apple Orchard Pancakes

1 jar Apple Orchard Pancake Mix
2 eggs
1 1/2 cups milk
1/4 cup vegetable oil
1 tsp. butter

Place contents of jar in a large bowl. Beat eggs in a medium bowl; stir in milk and oil. Add egg mixture to pancake mix; stir until just blended. Lightly coat griddle with butter. Heat over medium heat until griddle is hot. Pour 1/4 cup batter onto griddle for each pancake. Cook until bubbles form and bottom of pancakes are brown; turn and cook about 2 minutes more, or until cooked through. Repeat with remaining batter. Serve pancakes with maple syrup, if desired.

Makes about 20 pancakes.

seriously, when the presidency does the assignments again, i'll put in my request for you! those pancakes look delicious---we used the target brand mix tonight and i've learned that while buying "brand name" isn't always nesessary, it should be for pancakes! i'll have to try yours out next time!

Amber, this is one of the V.T. ideas that I haven't used yet. I hadn't found your blog until 2010!! I have enjoyed using some of your ideas for the sisters on my route, as well as my partner. Thanks so much!! I do miss seeing any new ones for 2012 however. :-)
