Macadamia Coconut Icebox Cookies

Usually Anna is my cooking buddy. But early last week, I wanted to try a recipe I had found and Anna was at a play date so I asked Sam if he wanted to help. He reluctantly agreed. But by the end of the adventure, he had warmed considerably. And then when he actually TASTED the fruits of our labors...? Well, I think I might be able to talk him in to helping me bake again one day. He just won't wear an apron.
















Macadamia Coconut Icebox cookies

1 1/2 cups butter, softened
1 Tbsp. vanilla extract
1 tsp. baking soda
2 cups quick cooking rolled oats
1 cup flaked coconut
1 1/4 cups granulated sugar
2 cups all-purpose flour
1/4 tsp. salt
2 cups chopped macadamia nuts

In a large bowl, cream butter and sugar until fluffy. Stir in vanilla. Sift together flour, baking soda, and salt. Stir into the butter mixture. then stir in the oatmeal, macadamia nuts and coconut. Divide dough into three portions and roll into a log in plastic wrap and put into the refrigerator to chill for 2 hours, or wrap and freeze for up to two months. Preheat oven to 325 degrees. Grease baking sheets. If dough is frozen, allow to thaw on counter for 10 minutes. Slice each log into 1/4 inch rounds and place about 1 inch apart on prepared baking sheets. Bake for 12-15 minutes until golden brown. Allow to cool for one minute on baking sheet, then remove to wire racks to cool.

Yummy! And thanks for your sweet comments about my son. I am sure he will remember, especially since I print all of his letters (he gets to email) and am having them bound in a book.

In all of the hubub of your life right now, you are still baking cookies! Good girl! It's great you had Sam in the kitchen with you (apron or not!) All your great recipes are going to serve him well! :) I let my boys pick a meal to make for dinner a few times a month and then they help me prepare it. It's been fun to spend that time with them, and I think it's pretty cute to see boys baking!

mmm I love macacamia nuts, coconut and oatmeal...so I bet this is a yummy cookie. What a great thing to have on hand...cookie dough in the freezer. My kids LOVE to cook! I just need to be more patient and let them.

Hello again. This post really put me in a baking mood! So I had a few hours and so I am making some cookies...not this recipe but another...I will post on my blog tonight or tomorrow. The kids have friends over right now so it's me in the kitchen with the raido and I am having fun...off to take another batch out of the oven. Thanks Amber for always sharing such good things and keeping me motivated.
